It's not really "right", her hair and eye color has been purple ever since she was implanted with the worms. Considering that started sometime just before Zero started, it's hardly a surprise no one draws her with her original hair color.
Even in the anime itself, Sakura was first shown with black hair (when she was in the worm pit). The next time we see her, also in the first episode, her hair had already turned purple by then.
Well, it depends what the setting is. In general, if she's with Rin, her hair should probably be black, unless she's somehow supposed to have been rescued from the Matou family, because pictures of her with Rin likely pre-date her being adopted.
