It was also in MGS: Snake Eater and you can eat it, but you lose the most valuable item in the game after beating it.

I don't have any specific source to quote this from but it might have to do with the theory that the Tsuchinoko was actually a cat that a foreigner to japan mistook for a short, round jumping snake.

But more likely it's just the author being silly.
