I think the line meant that instead of a traditional losing condition of strikes, it was instead "You lose when you can no longer hold a shinai".

But... a win in Kendo is determined by who landed two more legal strikes than the opponent, not a KO count...

Isn't it like if you strike a home run you can run around the field as many times as you like until they get the ball back.
So here, you can land as many strikes as you want until he wakes up.

(now obviously I don't play both sport, so don't bash me for it)

Also, the knockout count just means they're not playing by standard kendo rules; say Ashigara came up with some weird kendo/MMA hybrid for a more satisfying, knock-down-drag-out type of duel. And also because it means she could use superior strength/toughness to make up for gaps in technique.
