You ever have a bone-in ham steak? Marrow is pretty soft, and kind of gritty. It's probably like drinking a smoothie.

From here you just bang down the side where the bone is cut to get the marrow to drop on a plate. Quite tasty.

The marrow is actually quite sought after in these parts of the world. We typically have two ways for getting at it:

• Piece a hole at one end and suck it out with a straw (most common), or
• Chop one end open with a knife, turn the bone over and knock it on the plate until it spills out.

For the record, the idea of eating / drinking the marrow grosses me out so I shun it entirely. Can't say the same for the rest of my family.

Bone marrow is... well, an acquired taste, so to say. I think I'm one of the lucky folks who like to eat the bone marrow when given the chance, though getting quality bone like in the comic is kinda hard where I live.

Chicken bone marrow? Not so tasty, compared to pig or cow...

Note: Bone marrow is quite rich in iron, being that it's where new red blood cells are produced, thus is very good for you if you're having trouble with low blood count or anemia.

Considering the parts of the pig that people traditionally eat in my area, I'm a little surprised marrow isn't one of them.

I know that's true with red marrow, but I though most of the marrow in long bones (like those in the comic) were mostly yellow marrow and, thus, mostly fat.
Then again, that's based on (my rather narrow understanding of) human physiology, so using that to estimate the distribution of red/yellow marrow in the bones of other animals is definitely a mistake...

I think I saw Anthony Bourdain eating something like this in Singapore and it looked absolutely fantastic, so I would be down to try it.

There are part of the pig you DO NOT eat? Here in Italy I think we eat, directly or to prepare other food, pretty much everything... Well, a part of the bristles and (maybe) the eyes.
