This would be pretty sweet to see: Sarada becomes Hogake, helping to redeem some of the Uchiha clan's image, while Boruto becomes her right-hand man, an elite Anbu or something similar.

It would be honestly a nice change of pace as Buroto says he hates the Hokgage. But I"m just afraid that "status quo" is gonna kick in and Buruto just becomes Naruto 2.0 and Sarada just becomes Sasuke 2.0 genderswapped version.
Even in-universe, I'm not clear on why everybody was expecting Boruto to be the next Hokage. Isn't Himawari the one who's a prodigy?
Yes and no, Boruto is and has always been a talented shinobi, who was enthusiastic about becoming a Shinobi. It was Sarada who initially didn't see what the big deal was or why people wanted to become shinobi. As far as prodigies go Boruto learned the Shadow Clone technique fairly quickly, and came up with his own variation on the rasengan that actually proved to be super effective and conceptually is superior to his father's. Remember it took Naruto a while to figure out how to just throw the rasengan, not to mention make it invisible. Himawari is definitely meant to be special in that she has developed the Byakugan and will likely be a Hinata 2.0 clone in that shes cute and sweet, but also like her mother potentially deadly when she uses it and allows those aggressive tendencies to take over.

Actually Himawari wasn't expanded on too much, but there's the fact that she can use Byakugan at young age.
And Boruto is a prodigy, but most people just write that off as "because he is Hokage's son", which upsets Boruto and main reason why he hated Hokage. And for the same reason people are also expecting Boruto to be the next Hokage since he is the "Hokage's son".

Actually, after he reconciled with his father at the end of the movie, Boruto no longer hates the title of Hokage and respects it and his father's work. He just wants to forge his own path instead of following Naruto's footsteps which is why he will help Sarada become Hokage and be her protector.
