Really? Chara is someone that will systematically hunt each and every single monster down and kill it. Making sure that she doesn't miss a single one whilst Koishi would stop well before being halfway done due to things becoming tiresome/boring and then turn her attention to something more fun, like fishing.

As you have said Chara will indeed systematically kill them but Koishi?
She will kill them because it's either one of two things
One it's fun and two she's bored and wanted to do something exciting
Chara has the "it's all a game so it's okay" excuse....but Koishi?

Actually unless you basically circumvent the games mechanisms, Chara's reason is effectively genocide, as the game no longer functions after that. Making the game work again as intended would just mean every game ends in genocide.
That being said, while reasons have been inferred for why Chara does what they do, one was never really given. They're not the one who says it's just a game.
There's no real reason the two characters need to one up each other though
