It could be that Kaban's ability as a human derived Friend is to be better at human activities than any novice can hope to be, since Sandstar seems to make the Friends do things which are otherwise impossible (like the flight capabilities of the bird derived Friends, or total invisibility versus simple color changes in the case of that chameleon). It also explains her success in cooking and construction despite the bridge and the cooking at the library being get first time doing them.

Yeah that makes a difference between a Human "Friend" to an animal "Friend". While humans lack the stuff to survive in the wild, they make it up with their knowledge, adaptability and tools to surpass nature which allows humans pass their limitations.
Of course... That knowledge is passable by DNA as well
