I assume you're reffering to the one that's next to the kanji. If so, they're just the pronunciation of said kanji.

Singlehandedly created it. I don't think the two have ever interacted with one another outside this series of comics.

Do regular servants even interact with each other in F/GO?

Yeah, they do. Canonically, Chaldea summons all Servants that CAN be summoned. Every Servant that is or was available in the summoning pool at any point is canonically running around Chaldea. Only Servants you actually have will interact via My Room lines, but all Servants, regardless of whether you summoned them on your account, can and do interact with each other in Interludes. For example, Kiritsugu just got an interlude featuring the "Emiya Family" + Taiga. Jeane Alter has one with Geronimo, Billy the Kid and if I recall correctly Shakespeare as well, all in the same interlude. There are plenty of examples, but they do indeed interact.

On another note, this kind of does mean that the Uber Whales have the cannon playthroughs.

Nope. Nada, unless there are interactions in the interludes I am unaware of.

To boil down the above, whether or not you have actually summoned a Servant, for the sake of story it is assumed all servants have been successfully summoned.
