If it's hot sauce, there is no such thing as too much.

Depends an awful lot on the hot sauce. Many are too salty or have some other flavor that overpowers the rest of the meal, such as sourness from the vinegar. (Most hot sauces are over half vinegar or just really salty water.) The only sauce that just adds spicy without other flavors is either pure powdered or pureed peppers, and you probably don't want to just chuck a whole bottle of that in, either. And sure, then there's stuff like Dave's Ultimate Insanity Sauce, where you're advised to add one drop at a time, where dumping a whole bottle in makes it a genuine poison.

Still, this is why it's best to home-make the sauces - storebought stuff is always too greasy and salty and has too distinct and consistent a flavor. Put French's Yellow Mustard on something, and all you taste is "this tastes exactly like every sandwich I've ever put yellow mustard on ever", regardless of what it is because scent and flavor trigger the memory so hard.
