The only "over-spiced" food in Mexican cuisine is the mole, but it's not even close to spicy.
Here in Mexico we don't make dishes over the mild spiciness level, that's why in every real Mexican restaurant you get a specific type of salsa for every dish. If it's about other spices, welp, there's a lot of other cuisines that would make people explode in their toilets.
Now I want to make a foodie channel to show how to prepare authentic Mexican food.
Man, now I'm wondering if the memes about Mexican food are real.
It is true for "Mexican" food like Tacobell and stuff like that, but not true for actual mexican food. Is like comparing the sushi that we eat here in the west against the sushi of japan. Yes, they are similar and one has the other as a base, but they are completely diferent foods.
It's called Tex-Mex by many here. Based much more on American-style grilling and barbeque with traditional Mexican preparation and presentation, the former part being absolutely obsessed with tomato, onion powder, cumin, pepper, and red chili. Nearly any kind of marinade, sauce, or salsa has two or more of these ingredients, and some people can't deal.
Go to a place like Chipotle's or Qdoba, one would be greeted by a small selection of salsas. Usually one green, and three or four others chiefly described with varying levels of heat and texture. Tex-Mex and spicy chili taste are to be expected most of the time.
