I don't get it pineapple is great in softening up tough meat...

although what they're doing here is just straight up placing a slice on it like toppings

A way when cooking is to add the pineapple bits (not the whole slice, I can't recommend) as the last ingredient

Didn't know that pineapple were so "taboo" in some cuisines. Here in Mexico, a taco al pastor is not 'al pastor' if it doesn't have pineapple.

I've eaten pineapple in curry years ago. A bit odd, but generally delicious.
