It depends how they're summoned. The Berserker class is special, in that the master has to choose to summon a servant as a Berserker. So, whilst they would (presumably) fit the requirements for the Berserker class, they would only be summoned into that class if master added the extra lines to his incantation to enforce it. If not, then they would be summoned as a normal servant, in a different class.
