One wonders how extensive a search for places that served boat-wrap Hitoshi made. Either that, or the chef is a rank novice (and/or the hotel doesn't have much of a larder budget).

If it's anything seen thus far, 'she' got excited upon seeing the advertisement and overlooked the details. Food is a major weakness of Hitoshi/Kogasa, that and his wife cosplaying.

Supposedly, the stuff served on the boat would've found its way to the Miso soup which are occasionally served after the boat. Tasting only Bonito is well...

It's not like there's much flavor to be extracted from an empty shell in the first place.

Keep in mind that Hitoshi wasn't the one all worked up over the boat-wrap, but Remilia. Maybe Hitoshi isn't that knowledgeable about sushi culture, and didn't know what other terms to fish out to ensure that the kitchen knew what it was doing.
