So how far down does saitama have to put his power level to match Vegeta's?
Saitama has yet to show any physical feats that would put him above even the saiyan arc though? The beam he deflected was life wiping not planet busting.

no it was planet busting...if not a multi planet buster...plus if the shock wave from saitama's serious punch is any indication...saitama could easily destroy multiple planets in quick succession with a serious series version of the multi executive punches...so of course he's more powerful then vegeta.
