Teh Wiki doesn't say how somen is made, but "showing the ingredients the dance of my people" is how wine is made.

Besides, Ooi and KTKM are wearing socks.

That, and the dough is covered with clothes too, so basically the dough didn't come directly into contact with their bare skin (which is a shame, dangit..!) Jokes aside, kneading the dough with feet will make the result chewier, or so the teuchi udon recipe said.. Perhaps the same principle could apply to somen too..
