Fish scales aren't part of a fish's nervous system, she wouldn't have felt a thing. Prolonged removal from salt/freshwater is what usually kills them by the time you get to removing the scales. If THAT doesn't kill them, then gutting them will (whoever eats her is going to get really, really sick)

Usually fish are banged on the head before they can die of lack of oxygen (out of the water their gills don't function to get oxygen, they ONLY can separate oxygen from water, not get it raw from the air). And I have a hunch that this suffocation takes much longer to die than it would to be beaten on the head, thus that's why fishermen beat their fish immediately after capture.
